Spanish Lentil Stew With Bay Leaf and Pimenton. Lentejas

A nice vegetarian/vegan dish for those cold and short winter/autumn days.
It is very easy to make. You cook everything in one pot. Very quick and simple, no messing!.
It should take around 40 minutes, including preparation and cooking time.
Ingredients for 2
– Green lentils. Half small cup of coffe per person. Green Lentils are available in any Indian or eastern shop :). "Lenteja Pardina" in Spain pardina the best lentil one for this type of dish .
– 1 or 2 potatoes
– 1 dry bay leaf
– 1 Carrot
– 1 Green pepper
– 1 tea spoon of Smoked Spanish Papikra – sweet (Pimenton Dulce)
– Vegetable stock (stock cubes are fine)
Process
– Put some olive oil in pot/pan, heat it up
– Add some crushed garlic and stir (The oil will get the flavor f the garlic)
– Add some sweet Spanish paprika (Pimenton Dulce). Stir for few seconds. 1 tea spoon.
– Add the lentils, stir. Here you need to make sure that the paprika does not burn, or it will get a bitter like flavor. Just add the lentils, stir a couple of times and add the rest
– Quickly add the (whole) carrot, chopped potatoes, chopped peppers and cover it with stock (the water must be cold)
– Add the bay leaf
– Bring it to the boil and then reduce the heat. Let it simmer for 20-30 min (till the potatoes and lentils are soft). It could take a bit more, check every now and then
Some tips:
– The trick is to cut the potatoes small/big enough so the will cook when the lentils are cooked.
– "Quick" to cook lentils will not work as the potato takes also some time to cook
– The carrot is shown on the picture whole, but you could cut it for serving. You should also cook it whole so everything is cooked at the same time.
– Traditionally this dish has also some chorizo, ham or other types of cured meats.

I’ve mentioned my salads to many people, and since plenty of people have asked for the recipe I decided to document the making of my salad tonight, and do a Flickr Photo Recipe.
First, let’s be clear about this: there is nothing special about this salad. It’s all very straightforward, basic salad making. However, it’s a much more interesting and tasty salad than just some lettuce, cucumber and olive oil tossed together, which is what a lot of people tend to do because it’s quick and easy.
Making a good but simple salad isn’t difficult, and I’ll show you just how to create a salad great for serving to guests in very little time. Again, there is no special skill involved, so anyone can do this.
The ingredients:
– baby leaf salad
– crispy mixed leaf salad
– curly parsley
– chives
– salad onions
– green olives
– one or two sweet peppers
– balsamic vinegar
– white wine vinegar
– olive oil
Optionally, you can add if you wish:
– one or two tomatoes
– Italian herb seasoning
Note that the amounts I’ve purchased (and pictured above) are good for two servings of 2-3 people. I often make these bowls to serve as a full meal for myself, so if you’re like that, note that about half of all of this will be good for one full one-person meal.
Also note that it is very important to get quality ingredients. Choose carefully when you buy them: check that there are no discolored/brown leaves in the salad bags or on the parsley; make sure the chives and salad onions look fresh and dark green; choose a cucumber and sweet peppers that feel firm when you slightly squeeze them. For the olives, I recommend Turkish or Spanish olives. Get pitted olives without any special treatment or additions.

Yet another unfocused lunch. Soy burger with mozzarella cheese (bought a whole ball on special, I will be using it a lot…) tomatoes, sweet corn, salad, Uncle Ben’s Spanish rice, avocado and mango (notice, it is also mango week) topped with mango dressing.
