ok here it goes ive been trying to make these very nice sweet great tasting chocolate truffles that you take a melon baller and scoop out into little balls well ever time i try to make it it doesnt go hard enought for me to dot hat and when i do sort of try to get it into balls whent hey get into the freezer then flatten down they were made with milk chocolate coco condentenced milk vanilla and cooked till it was think shinny and creamy and it tastes great but it wont hold shape what can i do or what did i do ever recipe i get tell me to do the same thing what could i be doing wrong
ive let it sit over night ont he last batch didnt make a difference those ones still went flat this batch i made tonight is looking like its doing the same thing gooy yummy mess not balls..lol this is going to be great if i can jsut get balls out of it anyone out there with some ideas can it be recooked again will it make it better or worse anything here thanks a bunch

How long are you letting the chocolate chill. It’s easier if you let it chill overnight before scooping. Also put the mixture in a shallow dish so it cools faster.
